Back by popular demand: Monika's Apfelkraut Recipe.
4 strips bacon diced
1 cup chopped onion
2 pounds sauerkraut (in the bag - not the can)
2 medium sized tart apples, peeled cored and sliced
1 cup meat broth or 1/2 cup broth and 1/2 cup white wine
3 tablespoons brown sugar
1 tablespoon vinegar
1 teaspoon caraway seeds
freshly ground black pepper to taste
2 - 3 sausages/bratwurst cut in chunks
Brown sausages, and cook bacon until almost crisp, remove and set aside. Add onion and cook and stir until transparent, not brown. Add remaining ingredients, and the sausage & bacon bits. Bring to a boil, then reduce heat and simmer gently for 20 minutes or until apple slices are tender.

Wild Rice Soup

1/2 cup wild rice

1 pound bacon

3 tablespoons bacon drippings

3/4 cup chopped celery

1 cup chopped onion

1/3 cup chopped green pepper

2 - 14 1/2 oz cans (ready to serve) chicken broth

1 - 4 oz can mushrooms

3 - 10 3/4 oz cans cream of mushroom soup undiluted


Wash wild rice.  Boil rice for 15 minutes and drain; set aside.  Fry bacon until crisp.  Remove bacon and reserve 3 tablespoons of the drippings.  Saute celery, onion and green pepper in drippings, until onion is transparent.  Put in a large kettle and add rice, broth, mushrooms, soup and diced bacon.  Cook on low heat 1 hour or more.  Do not add salt.
